Examen idag 🥳 och parallellt med det rullar Mullvadsbryggeriet AB alldeles strax igång. Något alldeles extra att få dela det med sin bror. Vi kommer köra småskaligt på sidan om våra ordinarie åtaganden men med fullt hjärta.

Some experimental batches 😎

1. Tripel, it came out just as wished and is my very first attempt of an belgian beer style along with using a STA-1 positive yeast.

2. Neipa with homegrown and not so happy in Sweden Cascade, came out really nice aswell but went from fresh to oxidized faster than i can spend more money on fancy shining beermaking level ups.

3. Belgian IPA with noble hops and the same yeast as i used for the triple. This yeast is quite dominant so the impression/taste of the beer was very similar to the triple.

4. Double IPA, Testing the theory that you get 80% of the sugars already after 20 minutes of mashing, so instead of mashing 1 batch for 60 min, I mashed 3 along with a decoction mash a side to get some maillard reaction. OG 28 plato FG 9 plato -Gojira IPA🦖

Picture nb 5 is the same double IPA with a few drops of water to see how it affects the color.

At the end of the summer i started my education as ”brewery technician” at campus and with that comes of course some experiments to test the theory 😎 This is a 2 weeks old Neipa with the sulphate/chloride ratio maximized to the limit for the style and with the HBC 586 from Yakima Chief as aroma. A really nice taste with a creamy mouthfeel. It will not get old enough to meet and greet any curious (thirsty) neighbors sneaking around 🥸
Today White Labs held a lecture where (among other things) they brought up the style Neipa and the yeast I just used for this one (WLP 077) This yeast is as i understood it selected to help release (biotransform) bound aroma molecules ”Thiol precursors” from hops like cascade,columbus,saaz and so on. So in this case i don’t really need to use hops like Citra, Mosaic and so on that are rich with free Thiols while fermenting with this yeast.
I just have to brew it again and test to dryhop it with Cascade that maybe holds a whole secret djungle within🍻

A Lemonade Smash Dipa in tha house 😎 Less is more as it seems. Easy peasy recepie and the outcome is a perfect match to the summer.Did this previously on a Braumeister but now things have changed and we are now owners of a Brewtools B150 pro system. In our world its an upgrade. The goal is to reproduce the Smash with hopefully the same nice taste as before. A coldcrash and some Co2 between us and the Funday😎🍻
A tip, don’t try to boil dried lemon peels without a hopspider or similar in this system because it will clog away your beauty sleep.
